Warming Meals for Winter
Make nourishing, economical meals with recipes such as chicken and mushroom pie, with local cider and using real local free range chicken, and warming soup. Try your hand at making delicious bread, homemade lemon curd and scones and indulge yourself by making chocolate brownies.
This course includes, after tea - on Saturday 4th February - an entertaining demonstration and talk on preparing, jointing and boning a whole free range chicken by traditional butcher, Duncan Wills of Le Gourmet, Monmouth. Try real chicken as it should be prepared and eaten in the most traditional way, for the table and the pot. Make roast chicken in the way in which the butcher would like to eat it himself. Duncan Wills is one of the few surviving independent butchers in Monmouth, who sells good quality local meat and poultry, mostly named breeds from named farms, and his home made faggots are “a local legend”.

Spring Time in Herefordshire
A weekend of delicious Spring recipes using seasonal produce such as local wild garlic, asparagus and new potatoes. We will be using lots of skills in making delicious dishes such as rhubarb and orange cake and fillet of whole salmon..... and treat yourself with homemade butterscotch icecream. Also make a tasty casserole using shoulder of Welsh lamb.
This course includes - after tea on Saturday 12th May - a fascinating demonstration and talk on cuts of lamb by a traditional butcher, Duncan Wills of Le Gourmet, Monmouth. Duncan, preparing economical cuts in an interesting way, will show how a whole lamb can be used so that nothing is wasted.

Summer Time in Herefordshire
A weekend packed with delicious Summer recipes using lots of local ingredients grown and reared in Herefordshire. Make melt in the mouth pastry for tarts and fill with home made creme patisserie and delicious fresh soft fruit like strawberries and raspberries. Also try your hand at making focaccia with herbs, strawberry ice cream and summer pudding. Evoke childhood memories by making blackcurrant jam using local Herefordshire fruit.
Enjoy an al fresco lunch in the garden, weather permitting, viewing the beauty of the surrounding countryside.
After tea on Saturday there is an optional walk to a local beauty spot such as Garway Hill or the River Monnow.

Join us for a popular Autumn weekend and cook delicious recipes made from the abundant fresh produce of the Herefordshire countryside, including from our own orchard and vegetable garden. Thrill your senses by joining us in making damson ice cream and scented geranium apple jelly, and learn how to make that perfect scone.
After tea on Saturday you might also like to see more of the lovely border countryside and the work of the farm by watching the evening milking and meeting the calves.
